Absolutely delicious, but what was supposed to be a pancake turned into one of those discs to play at the beach. Yummy and crunchy but I wasn’t able to roll them as I had hoped. The eggplant marinated in lemon, salt, and parsley which tops the guacamole, was the high point of this dish.
